SPAGHETTI SQUASH

We ate our spaghetti squash just like, well spaghetti.
It was delicious with home made pasta sauce poured over the top.
Here is the raw squash cut length ways ready to go in the oven. I baked the squash with olive oil rubbed over it for around 40 minutes.

All cooked. You just fork out the squash and it comes out like spaghetti. It looks so cool.

Okay, so it doesn't photograph well but it is so yummy.

It was a winner with hubby and all of the kids eating it up without complaint. I only have two squashes left on the bush and really wish I had more now.

LUNCH TODAY

Warm Cajun Chicken Salad

I have started eating a little bit of chicken every now and then, but only free range or organic as I am at least comfortable with the way they lived their lives.
This is one of my favourite meals, it is a little higher in fat than I usually eat but that is because I add avocado which has good fats in it. If you want this meal less in fat then don't put it in.

Warm Cajun Chicken Salad.
130g free range chicken breast-no skin
1 tsp olive oil
cajun seasoning
1 cup lettuce
1/2 cup chopped tomato
1/4 small avocado
6 slices cucumber
onion
salt and pepper

Lightly season chicken breast with cajun seasoning and grill until cooked.
Chop avocado, tomato, cucumber and onion and place in bowl with lettuce.
Add sliced chicken
Drizzle olive oil over top and finish with salt and pepper to taste.

Fat: 11.5g

WINTER CROPS

For years I have been getting my seed from Diggers Club, but after a very poor germination on quite a few of my seeds, I decided to try out Eden Seeds. Their seeds are old traditional open pollinated varieties that are preferably from local sources that are bio-dynamically or organically grown.

My seeds for our winter crops arrived today, time to get planting.

I had a voucher to use up and I really wanted to buy this DVD

I love Costa's enthusiasm and passion for creating a sustainable garden. Plus he's just so down to earth and funny.
The new series aired last night and it looks like he's just getting better and better.

FREEZING EGGS

I have been busy freezing the glut of eggs I have so I will have some to bake with when the chooks stop laying.
I followed the advice of Kate fromliving the frugal life
I only put half of the amount of salt in the mix and put 5 eggs in each bag.
1 egg = 2 blocks.
I will mix up some eggs with honey for another batch as soon as I've sourced some local honey that is.

LOOK WHAT I FOUND


My first eggplant
and

spaghetti squash.

I picked the last of the ripe tomatoes and ripped out the vines. Some still had green tomatoes on them and I read somewhere that if you hang up the vine it will still ripen the tomato. I'll give that a go.

Tomorrow I will be drying these tomatoes and chillies
